Loft fills a gap

Lying on your side, the gap between mattress and head is roughly the distance from the outside of your shoulder to your ear. Broad-shouldered people need a markedly higher pillow than narrow-shouldered ones.
On your back, the gap is smaller: the curve of the neck. Too high a pillow pushes the chin to the chest.
On your stomach, almost any pillow bends the neck backwards, which is why stomach sleepers are often advised to use a very thin pillow or none.
